Perfect Breakfast

This morning’s breakfast was P-E-R-F-E-C-T!

The oatmeal is a Kashi GoLean packet in Truly Vanilla flavor with half of a Trader Joe’s “A Fig Walks Into a Bar…” crumbled in. Next to that is a 1/3 cup of my own special greek yo mix… 

  • 16 oz. Fage 0% 
  • 10-15 strawberries, stemmed and blended to a puree 
  • 1 tbls. agave 

YUM! That’s all I have to say. 

And of course, this breakfast also included a scrumptious Cara Cara orange.

I’m back…

Hello! 

My grandmother passed away the day after I last posted-12/30/08-and since, I’ve been in a kind of haze, just trying to put my life back together. So, it’s now been 21 days since she died and I’m feeling much better, feeling more human again. So, I think I’m ready to start food blogging again.

The day after I posted my last post, my grandmother had a stroke, so, she’s now on hospice (end of life care) at home. I’m pretty much subsisting on a diet of cereal, grapes, and Chipotle veggie bowls, so, very boring anyway… It’ll probably be another week or so before Hil passes away, so, I’ll be back around then. Sigh…I’m very tired, but I need to take either a run or a bike now, need to de-stress. Last night, I hopped on the treadmill for a jog, which was great, then as soon as I came out of my room, my uncles suggested a walk, so, we took a nice, brisk 3 mile walk, which was even better than the jog! =) Don’t think I have time to jog this morning before heading off to work (gonna help drywall our new office, fun…not!) but I think I’ll take a bike ride sometime later. So, I’m off…

Hi…

I thought I was sick of food-logging, but as I looked at my old posts, I realize that I miss it. I’m gonna start logging again, as I really do enjoy it. So, starting tomorrow morning, I’ll be food-logging again. I had forgotten that it was fun. =)

Long, long day

Yesterday was a very long day! (full explanation over at gaygirlblog.tumblr.com) 

We left at 8:30 and I ate a yogurt bowl on the way. 

  • 1 container vanilla Oikos 
  • 1/4 cup-ish GoLean Crunch 
  • 1/2 a banana, cut up in the cup 

And since there was zero traffic, we got there early and everyone was eating breakfast, so, I had another banana and some orange juice. 

After breakfast, we did our first two workshops and then went to lunch. At lunch, they had tacos, so, I had some rice, a little baggie of chips, and a soda (that being said, I felt sick all afternoon after drinking that soda, bad idea). During lunch, they also had a resource fair, so, I walked around with my new friend Elliot while he eyed who we’re calling ‘the boy in the red shirt’. At the fourth workshop, people were snacking on things, so I pulled out my pomegranate walnut granola plank and ate about half. I was absolutely parched by the beginning of the fifth workshop, so, I hunted around for some bottled water and finally found where they keep it. Dad picked me up at 6:30 and there was tons of traffic, so we didn’t end up getting anywhere near home until 8:00 and we were both starved and picked up our favorite, CHIPOTLE! By then I was exhausted and really excited to have my favorite meal. =) 

I slept late and didn’t have breakfast, but I’ll post my lunch in a little while when I can plug in my camera.

Quick post, gotta read!

Hil and I went to Barnes and Noble this afternoon and I finally succumbed and bought Twilight, after seeing the trailer for the movie, I decided that a book about vampires may not be so strange, so, we’ll see. I’m really looking forward to reading it.  

Anyway, I didn’t feel like cooking tonight, so, I stopped at Chipotle and got a veggie bowl. Didn’t take a picture, but as always it was totally yummy. 

I probably won’t post until tomorrow night, because I’m going to the IGSBY GSA (Gay Straight Alliance) conference tomorrow and I’ll be there from 9AM-6PM. They serve food there, so, there may be something for me to eat, but I think I’ll take a granola plank and some nuts in my purse just in case. =)

Oatmeal Turnaround

I used to hate and I mean hate oatmeal, but I can officially state that Kath has converted me! This bowl was incredible! Made it for me and made too much, so, I shared it with Hil.

  • 1 cup Bob’s Mill Extra Thick Oats 
  • 1 cup water 
  • 1 cup skim milk 
  • 1 banana 
  • 2 tbls raisins 
  • 1 tsp-ish agave 
  • 5 sprinkles or so cinnamon 

And on top of each bowl 

  • 1/4 of a (new!) pomegranate walnut granola plank 
  • 1 tbsp flax seed 
  • 1 huge PB spoon 

I had taken pictures of it before I stirred, but then I realized that my card wasn’t in, so, we just have the picture of it post-stirred. 

Don’t have any big plans today, but it’s all gross and hot, so, a jog is out of the question, but I may be able to get myself to the gym…

Beautiful Afternoon

Later this afternoon for a snack, I had a handful of what I’ll call Kristin’s Holiday Trail Mix, because it’s a special blend perfect for Christmastime. It is so good! 

 

  • pistachio kernels 
  • dried cranberries 
  • white chocolate chips (organic and trans fat free of course)

I was going to go on a jog (even laced up the tennies and walked down the block) but then I glanced at my iPhone (to change the song I was listening to) and saw that it was 5 o clock, so, I had to run home to start dinner, hopefully it’ll be a nice day tomorrow and I can go then. 

 

Dinner tonight was wonderfully simple. We started off with a simple spinach salad.

  • spinach leaves, cleaned and torn 
  • hot house tomatoes 
  • raw corn, straight off the cob 
  • lemon juice
  • olive oil 
  • flax oil 

 

And Dad also added to his: 

 

  • avocado 
  • sprouts

And the main meal was a family favorite, lasagna! This lasagna recipe is pretty common, but I’ll share it with you anyway.

  • 1 jar Amy’s Family Marinara (low sodium) 
  • 1 16oz container fat free ricotta 
  • 2 tbls Eggology egg whites 
  • 6 brown rice lasagna noodles 
  • A cup-ish part skim mozzarella 

And, I baked it with foil on top (in a 350 degree oven) for about an hour, then 10 more minutes to brown the cheese. 

 

I wasn’t incredibly hungry tonight and I didn’t finish my salad or my lasagna portion, so I may have one of these ah-may-zing (!) honeycrisp apples with PB later on.
